November 3rd is the anniversary of John Montagu’s birthday. It’s believed that this 18th-century English noble, better known as the fourth Earl of Sandwich, wanted to eat with one hand during a 24-hour gambling bender. So, he instructed his servants to serve him his lunch meat between two pieces of bread. To celebrate the occasion, November 3rd is officially “National Sandwich Day.” [Source: Information Week]
I love a good sandwich for lunch and I love trying new sandwich combos all the time. Sandwiches are the lunch stand-by in our house and I encourage my kids to try new combos all the time. My daughter is more adventurous to try new toppings, new dressings, and new fillings. My son would be happy to have the exact same sandwich for an entire school year. As a result, I push him to try new things though using one of my current mommy phrases = “You won’t grow if you don’t get a variety of food!”
So, when I found out it was National Sandwich Day on Twitter, the first person I thought of is my Twitter friend Alison Lewis. Alison is author of the new colorful and imaginative book: “400 Best Sandwich Recipes“. I have tweeted with Alison often on twitter and had the pleasure of meeting her in person at the Evo Conference this summer. I asked her if she would contribute one of her fabulous sandwich recipes to my blog today in honor of National Sandwich Day. So here it is! Enjoy my friends!

CALIFORNIAN SANDWICH
This is one of my favorite sandwiches. I love the simplicity of goat cheese and mayonnaise as the spread on this colorful vegetarian sandwich.
INGREDIENTS
(Serves 4)
1⁄2 cup Homemade or store-bought Mayonnaise
1⁄3 cup Crumbled Goat Cheese
1 & 1⁄4 cups Thinly Sliced Yellow Squash Zucchini (about 2 small)
1 & 1⁄4 cups Thinly Sliced Zucchini (about 1 large)
3 Roma Plum Tomatoes, thinly sliced
1⁄4 tsp Salt
1⁄4 tsp Freshly Ground Black Pepper
2 tbsp Olive Oil
8 Slices Multi-grain Bread (1⁄2-inch thick slices)
2 Avocados, thinly sliced
1 cup Alfalfa Sprouts
DIRECTIONS
- Preheat oven to 450°F (230°C)
- In a small bowl, combine mayonnaise and goat cheese.
- Cover and refrigerate until ready to serve.
- Place squash, zucchini and tomatoes on a large baking sheet.
- Sprinkle with salt and pepper.
- Drizzle with olive oil.
- Place in preheated oven, tossing occasionally, for 20 to 25 minutes or until tender.
- Spread mayonnaise mixture equally over one side of bread slices.
- Top 4 slices equally with roasted vegetables, avocados, sprouts and remaining bread slices, pressing together gently.
- Serve immediately.
Tips: If you can’t find alfalfa sprouts, I love using broccoli sprouts, which are also widely available in grocery stories. Choose zucchini that are firm with unbruised skin.
